Day Two!
Today hasn't been a very exciting day so far. I've tidied up the house, got ready for the day and put Mr. Mason down for his after lunch nap. My parents are on there way to visit and drop off some more of my stuff that was at their house! I'm excited to finally have a full size bookshelf, my hope chest and other miscellaneous things I've missed.
Since today doesn't hold much for interest, I thought I would share with you one of my favorite and easiest recipes. It's a HUGE hit with my little family and maybe, just maybe, it will be a hit for you also! I found it through Googling "ground beef crock pot recipes" and boy, was it a GREAT find!
Crock Pot Enchiladas
4 Servings
Ingredients:
1 can (14.5 oz) tomatoes (I used diced)
1 sm. chopped onion
1 clove garlic, minced
1/2 teaspoon ground red pepper (optional)
1/2 teaspoon salt
1 can (6 oz) tomato paste
1 lb. ground beef, browned (I always use a little more, we're a meat family)
1 package taco seasoning (of your choice)
2 cups shredded cheese
9 CORN tortillas
Sauce Preparation:
1. Whirl tomatoes, onions and garlic in blender to a saucy consistency.
2. Pour into medium saucepan. Add red pepper, salt and tomato paste. Bring to a boil, reduce heat and simmer for five (5) minutes.
Into the Crock Pot:
1. layer three (3) tortillas on the bottom, 1/3 of the ground beef, 1/3 of the sauce and 1/3 of the cheese.
Layer two (2) more times, ending with cheese.
2. Cook on LOW 6-8 hours. (I have a new crockpot from Christmas and it takes about 3 hours)
I hope you and your family enjoy this as much as mine has. But do not forget the taco seasoning!!! The last time I made these, I totally forgot about it, and it was definitely needed to give them the mexi taste!!
